Oda Nobunaga, Toyotomi Hideyoshi and Tokugawa Ieyasu were all born in present-day Aichi, which thus gave Japan its three successive unifiers. The prefecture is now the country’s leading industrial region, centred on Toyota, born in Koromo, a town renamed after the carmaker in 1959. Nagoya defends a culinary culture of its own, dominated by hatchō miso, a pure-soybean miso aged two years.
