Mountainous and turned towards the sea, Fujian exported people rather than grain: most Chinese communities in Southeast Asia, Taiwan and the Americas descend from it, and Hokkien is still spoken from Singapore to Manila. The Wuyi mountains produced the first semi-oxidised teas, oolong and lapsang black tea. The tulou, circular Hakka earth fortresses, housed an entire clan under one roof.
