Zaru Soba

Prepare the tsuyu
Mix the dashi, soy sauce and mirin. Heat briefly then let cool in the refrigerator.

Cook the soba
Cook the soba in a large pot of boiling water for 1-2 minutes (according to package). Drain and rinse thoroughly with cold water.

Serve
Arrange soba on a bamboo tray (zaru). Serve cold tsuyu in small bowls. Garnish with wasabi, green onion and nori. Dip noodles in tsuyu before eating.

- Only dip the bottom third of the noodle to appreciate the buckwheat flavor.
