Zaru Soba

Cold buckwheat noodles served on a bamboo tray, with tsuyu sauce, wasabi and green onion. Japanese freshness at its finest.

    Prepare the tsuyu

    Mix the dashi, soy sauce and mirin. Heat briefly then let cool in the refrigerator.

    Cook the soba

    Cook the soba in a large pot of boiling water for 1-2 minutes (according to package). Drain and rinse thoroughly with cold water.

    Rinsing removes starch and makes noodles firm and shiny.

    Serve

    Arrange soba on a bamboo tray (zaru). Serve cold tsuyu in small bowls. Garnish with wasabi, green onion and nori. Dip noodles in tsuyu before eating.

  • Only dip the bottom third of the noodle to appreciate the buckwheat flavor.
