Jajangmyeon

Dockworkers from Shandong settled in Incheon’s Chinatown after 1883 and adapted a noodle dish with fermented soybean paste; the Korean version, sweeter and blacker, appeared around 1905 at the Gonghwachun restaurant, now a museum. Jajangmyeon became the delivery meal par excellence, the symbol of moving day and of exams being over. On 14 April, "Black Day", those who received neither chocolate in February nor sweets in March gather to eat it.
