Goubuli baozi

Gao Guiyou, nicknamed Gouzi, "puppy", opened his stall in Tianjin in 1858. Business was so brisk that he no longer looked up to answer customers; people said "Gouzi pays no attention to people", and the name stuck to the house. The specification is strict: exactly eighteen pleats, a pork filling soaked in bone broth, and a semi-leavened dough that must stay white when steamed. Now listed on the stock market, the brand has spread across China and ranks among the century-old names protected by the state.
